We're really lucky to have Sarah on the Re:Store team - owner of the Rowan Tree Bakery who supply Congar's Cafe with delicious homemade bakes throughout the year. This year we're delighted to be sharing the Rowan Tree Bakery Christmas cake* recipe for you to bake at home.
If you wish to provide your own container please select 'supply own containers' at checkout and bring a named 1.5kg container to the shop for us to weigh your order into.
The cake mix comes with four pre-weighed packs of dry goods and full instructions. You can choose from:

The following ingredients are not included:
Regular/nut-free/gluten-free (Rowan Tree Bakery):
30ml Brandy (to make it alcohol free, you can use orange juice instead)
225g Butter
4 Medium Free-range eggs
1 tablespoon Black treacle
1/2 teaspoon vanilla extract
1 Lemon (rind and juice needed)
Vegan/Vegan and gluten-free
100ml brandy, rum or orange juice. We tried amaretto and would recommend!
175g vegan margarine
30g/1 heaped tablespoon Black treacle
Finely grated zest of 1 large unwaxed lemon
Finely grated zest of 1 large orange
120ml unsweetened plant milk
2 tablespoons red or white wine vinegar
Extra alcohol or juice for feeding
To decorate (if you choose the glazed fruit pictured):
A selection of nuts and dried fruit, e.g. blanched almonds, walnuts and cranberries (not provided)
5 tablespoons apricot jam
1 tablespoon brandy
Christmas Cake Mix - 8"/20cm cake
Sulphides, wheat/gluten, nuts including peanuts, almonds and walnuts depending on the mix selected
